Black Bean & Sweet Potato Stew

This is a big, comforting bowl of a stew, thick with soft sweet potato and glossy black beans. Paprika and cumin give it a gently smoky backbone, and it needs nothing more than a scatter of coriander to finish. It reheats brilliantly, so make the full pot and be glad of the leftovers.

Method
Serves 4 · about 55 minutes from start to finish.
Heat the olive oil in a large pan and soften the onion for 6-8 minutes.
Add the garlic, paprika and curry powder and cook for a minute until fragrant.
Stir in the sweet potato, black beans, chopped tomatoes and stock.
Bring to the boil, then simmer for 25-30 minutes until the sweet potato is tender and the stew has thickened.
Lightly crush a few pieces of sweet potato against the side of the pan to thicken the sauce further.
Season well, scatter with coriander and serve with rice or crusty bread.
