Chanukah Oven-Crisp Potato & Courgette Latkes
These oven-crisp latkes use olive oil, grated potato and courgette for a lighter sharing plate with proper browned edges. They are kosher pareve as written, with no meat or dairy, and packaged ingredients should be certified kosher. A sharp apple-cucumber relish keeps the plate fresh without needing sour cream.

Method
Serves 4 · about 50 minutes from start to finish.
Heat the oven to 220C / 200C fan and line two baking trays with parchment. Brush the parchment with 1 tablespoon olive oil.
Wrap the grated potato, courgette and onion in a clean tea towel and squeeze hard over the sink until very dry.
Tip into a bowl with the gram flour, 2 tablespoons olive oil, salt and black pepper. Mix until the vegetables are lightly coated.
Shape into 12 small, flat patties on the trays, pressing the edges together firmly.
Bake for 18 minutes, turn carefully, then bake for 10-12 minutes more until crisp and golden.
Mix the apple, cucumber, lemon juice and herbs into a quick relish. Spoon a little beside the hot latkes to serve.
