Lean Christmas Turkey, Chestnut & Cranberry Traybake
Christmas dinner does not have to mean every pan in the kitchen. This traybake gives you lean turkey, chestnuts, cranberries, sprouts and sweet roasted roots in one bright, practical main. There is no alcohol and no heavy cream sauce, just lemon, rosemary and good roasting juices.

Method
Serves 4 · about 65 minutes from start to finish.
Heat the oven to 200C / 180C fan. Toss the sprouts, carrots, parsnips and onion with the olive oil, rosemary, salt and pepper in a large roasting tin.
Roast for 25 minutes, turning once.
Rub the turkey with lemon zest, lemon juice, salt and pepper. Nestle it into the tray with the chestnuts and cranberries.
Roast for 16-20 minutes more until the turkey is cooked through and the vegetables are tender.
Rest the turkey on a warm plate for 5 minutes, then slice if using larger pieces.
Toss the tray vegetables in the roasting juices and serve with the turkey on top.
