Flourless Chocolate & Almond Torte

For anyone who likes their chocolate desserts deep, dark and not too fluffy, this is the cake to make. Ground almonds keep it moist, the centre stays slightly fudgy, and a slim slice is plenty in the best possible way. It is equally good as a dinner-party pudding or an afternoon treat with coffee.

Method
Serves 8 · about 50 minutes from start to finish.
Heat the oven to 200C / 180C fan. Grease and line a 20cm round cake tin.
Melt the dark chocolate and coconut oil together in a heatproof bowl set over a pan of barely simmering water, then leave to cool for 5 minutes.
Whisk the eggs, maple syrup and vanilla in a large bowl for 2-3 minutes until slightly thickened.
Fold in the melted chocolate mixture, then add the ground almonds, cacao powder and salt and mix until even.
Pour the batter into the prepared tin and smooth the top.
Bake for 25-30 minutes until the top is set but the centre still has a slight wobble.
Cool fully in the tin before slicing so the torte firms up neatly.
