These tender little cookies are made almost entirely from ground almonds, so they are naturally grain-free and low in sugar. Fresh blueberries burst into pockets of jammy sweetness as they bake, which means they need no added sugar at all. They come together in one bowl and are best still slightly warm.

Method

Serves 12 · about 30 minutes from start to finish.

  1. Heat the oven to 175C / 155C fan and line a baking tray.

  2. Mix the almond flour, desiccated coconut, cinnamon and baking powder in a bowl.

  3. Stir in the melted coconut oil, egg and vanilla to form a soft dough.

  4. Gently fold in the blueberries, trying not to crush them.

  5. Scoop 12 small mounds onto the tray and flatten each slightly.

  6. Bake for 13-15 minutes until golden at the edges. Cool on the tray for 10 minutes before moving - they firm up as they cool.
