Lemon Herb Chicken with Quinoa

There are evenings when a bright, tidy sort of dinner is exactly what you want, and this fits the bill. Lemon and parsley keep the chicken lively, quinoa adds substance without weighing the plate down, and the vegetables soften just enough in the pan. It is clean, cheerful cooking that still feels like a proper meal.

Method
Serves 4 · about 40 minutes from start to finish.
Rinse the quinoa, then simmer it in plenty of water for 12-15 minutes until tender. Drain well and set aside.
Cut the chicken breasts in half horizontally to make thinner pieces, then season them with salt, black pepper and the lemon zest.
Heat 1 tbsp of the olive oil in a large frying pan and cook the chicken for 4-5 minutes on each side until golden and cooked through. Lift onto a plate to rest.
Add the remaining olive oil to the pan with the courgettes and cook for 3-4 minutes until lightly coloured.
Add the cherry tomatoes and cook for 2 minutes more, then stir in the drained quinoa and a squeeze of lemon juice.
Slice the chicken, return it to the pan with the parsley, toss briefly and serve warm.
