Moroccan Chickpea & Apricot Tagine

This tagine leans into the sweet-savoury magic of North African cooking: tender chickpeas, jammy dried apricots and toasted almonds under a blanket of warm spice. Served over couscous, it is a generous, aromatic dinner that feels special but comes together in one pan. The apricots soften into little pockets of sweetness against the coriander and cinnamon.

Method

Serves 4 · about 60 minutes from start to finish.

  1. Heat the olive oil in a wide pan and soften the onion for 6-8 minutes. Add the garlic, ground coriander and cinnamon and cook for a minute.

  2. Stir in the chickpeas, chopped tomatoes, dried apricots and stock.

  3. Simmer gently for 25-30 minutes until the sauce has reduced and the apricots are plump and soft.

  4. Meanwhile, put the couscous in a bowl, pour over just enough boiling stock or water to cover, add a drizzle of oil, then cover and leave for 5 minutes. Fluff with a fork.

  5. Toast the almonds in a dry pan until golden.

  6. Spoon the tagine over the couscous, scatter with toasted almonds and fresh herbs, and serve.

Cook's tip

For an extra layer of flavour, add a strip of orange zest to the sauce as it simmers and remove it before serving.
