Method

Serves 4 · about 47 minutes from start to finish.

  1. Warm the olive oil in a large pan and cook the onion, carrots and celery for 8 minutes until soft.

  2. Add the garlic and stir for 1 minute.

  3. Rinse the lentils, then add them with the chopped tomatoes and stock.

  4. Bring to the boil, then simmer for 25-30 minutes until the lentils are tender but still holding their shape.

  5. Stir in the greens and cook for 4 minutes until wilted.

  6. Finish with lemon juice, parsley, salt and black pepper.
