New Year's Lucky Lentil, Tomato & Greens Stew
Lentils are often linked with good fortune at New Year, and this stew takes that as a cheerful starting point rather than a promise. Green lentils, tomatoes and leafy greens make a steady, comforting pot after a late night. Lemon and herbs lift it so the first bowl of the year feels fresh.

Method
Serves 4 · about 47 minutes from start to finish.
Warm the olive oil in a large pan and cook the onion, carrots and celery for 8 minutes until soft.
Add the garlic and stir for 1 minute.
Rinse the lentils, then add them with the chopped tomatoes and stock.
Bring to the boil, then simmer for 25-30 minutes until the lentils are tender but still holding their shape.
Stir in the greens and cook for 4 minutes until wilted.
Finish with lemon juice, parsley, salt and black pepper.
