Spiced Quinoa-Stuffed Peppers

Roasting turns peppers soft and sweet, and they make the perfect edible bowl for a fragrant quinoa filling. Pine nuts add richness, raisins bring little bursts of sweetness, and cinnamon ties it to those wonderful Middle Eastern flavours. They look beautiful on the plate and are just as good warm or at room temperature.

  • 4 large peppers, halved and deseeded

  • 2 cloves garlic

  • 1 small bunch fresh parsley or mint

Method

Serves 4 · about 60 minutes from start to finish.

  1. Heat the oven to 190C / 170C fan. Sit the pepper halves in a baking dish, drizzle with oil and season.

  2. Rinse the quinoa and simmer in water for 12-15 minutes until fluffy. Drain.

  3. Meanwhile, soften the onion in the olive oil, then add the garlic, cinnamon and coriander for a minute.

  4. Stir in the cooked quinoa, raisins and most of the pine nuts and season well.

  5. Pile the filling into the pepper halves and scatter with the remaining pine nuts.

  6. Bake for 30-35 minutes until the peppers are tender and lightly charred. Finish with fresh herbs.

Cook's tip

Cook the quinoa and make the filling a day ahead; the stuffed peppers then just need their time in the oven when you want to eat.
