There is something especially welcoming about apple and cinnamon baking in the oven, and these muffins make the most of it. They are tender from grated apple and just hearty enough from the oats to feel satisfying rather than fluffy and fleeting. Bake a batch on Sunday and they will keep everyone happy through the week.

  • 2 medium apples, peeled and grated

Method

Serves 12 · about 39 minutes from start to finish.

  1. Heat the oven to 200C / 180C fan and line a 12-hole muffin tin with paper cases.

  2. Mix the flaxseed with 6 tbsp water and leave it for 5 minutes to thicken.

  3. Blitz half of the oats into a coarse flour, then tip into a bowl with the remaining oats, wholemeal flour, cinnamon, baking powder and salt.

  4. In a jug, whisk the almond milk, maple syrup and flax mixture together.

  5. Stir the wet ingredients into the dry ingredients, then fold in the grated apple.

  6. Divide the batter between the cases and bake for 22-24 minutes until risen and firm on top.

  7. Cool in the tin for 5 minutes, then move to a rack.
