No-Bake Cacao Energy Balls

These little bites are sweetened entirely by dates and rolled through cacao for a proper chocolate hit. Peanut butter makes them rich and fudgy, oats give them substance, and they take fifteen minutes and no oven. Keep a batch in the fridge for when the afternoon slump hits.
Ingredients

Method
Serves 12 · about 15 minutes from start to finish.
If your dates are firm, soak them in warm water for 10 minutes then drain well.
Blitz the oats in a food processor to a coarse flour.
Add the dates, peanut butter, cacao powder and salt and blend to a sticky, clumping dough, adding a splash of water only if it is too dry.
Pulse in the cacao nibs so they stay crunchy.
Roll into 12 balls with damp hands.
Chill for 30 minutes to firm up. Store in the fridge for up to a week.
