This is one of those bakes that feels deeply cosy without asking for anything complicated from you. The aubergine turns silky, the tomato sauce settles around it, and the cheese gives you that irresistible golden top. Serve it when you want a proper oven dinner that still feels light enough for a weekday.

Ingredients

  • 2 large aubergines, sliced lengthways into 1cm strips

Method

Serves 4 · about 70 minutes from start to finish.

  1. Heat the oven to 200C / 180C fan. Lay the aubergine slices on two baking trays, brush with 2 tbsp of the olive oil, season, and roast for 25 minutes, turning halfway, until tender and lightly coloured.

  2. Meanwhile, warm the remaining olive oil in a saucepan and gently cook the garlic for 1 minute without letting it colour.

  3. Add the chopped tomatoes, half the basil and a pinch of salt and pepper. Simmer for 15 minutes until the sauce looks rich rather than watery.

  4. Spread a little tomato sauce in the base of a medium baking dish. Add a layer of aubergine, then some more sauce, a little mozzarella and a sprinkle of parmesan.

  5. Repeat the layers until everything is used, finishing with sauce, the rest of the mozzarella and the remaining parmesan on top.

  6. Bake for 20-25 minutes until bubbling around the edges and golden on top.

  7. Leave to stand for 10 minutes, then scatter with the remaining basil before serving.
