Cauliflower rice gets a bad name, but treated well it is genuinely delicious - and this golden, turmeric-flecked version proves it. Toasted cashews add richness and crunch, sunflower seeds bring extra bite, and the whole thing comes together in one pan in twenty minutes. It is light, grain-free and endlessly adaptable.

Cook's tip

Grain-free and naturally low in sugar, this suits a blood-sugar-friendly meal. Don't overcrowd the pan - cook the cauliflower rice in two batches if needed so it fries rather than steams.
