Turmeric Cauliflower Rice with Cashews

Cauliflower rice gets a bad name, but treated well it is genuinely delicious - and this golden, turmeric-flecked version proves it. Toasted cashews add richness and crunch, sunflower seeds bring extra bite, and the whole thing comes together in one pan in twenty minutes. It is light, grain-free and endlessly adaptable.

Method
Serves 4 · about 35 minutes from start to finish.
Pulse the cauliflower in a food processor until it resembles rice, or grate it by hand.
Toast the cashews and sunflower seeds in a dry pan until golden, then set aside.
Melt the coconut oil in the same pan and cook the onion for 5 minutes. Add the garlic, turmeric and ground coriander and stir for a minute.
Add the cauliflower rice and cook, stirring, for 6-8 minutes until tender but not mushy.
Stir through the peas or greens for the last couple of minutes to warm.
Fold in most of the toasted nuts and seeds, season, and finish with fresh coriander and the remaining cashews.
