Mediterranean Butter Bean Stew

Big, creamy butter beans are the stars of this sunny, olive-oil-rich stew. They simmer with tomatoes and garlic until soft and silky, then a handful of spinach wilts in at the end. Method
Serves 4 · about 40 minutes from start to finish.
Warm the olive oil in a wide pan and cook the onion gently for 6-8 minutes until soft.
Add the garlic, paprika and oregano and cook for a minute.
Stir in the chopped tomatoes and butter beans and simmer for 15 minutes until thick and glossy.
Add the spinach a handful at a time and let it wilt into the stew.
Season generously and add a final drizzle of good olive oil.
Serve warm with crusty bread or over grains.
