Big, creamy butter beans are the stars of this sunny, olive-oil-rich stew. They simmer with tomatoes and garlic until soft and silky, then a handful of spinach wilts in at the end. It is the kind of simple, honest cooking the Mediterranean does so well - ready in half an hour and best mopped up with good bread.
