Berry & Coconut Baked Oatmeal

Served warm with a spoon, this sits halfway between breakfast and pudding in the nicest possible way. The oats turn softly creamy underneath while the berries burst on top and stain everything pink around the edges. It is cosy, generous and very easy to make for a tableful of people.

Method
Serves 4 · about 50 minutes from start to finish.
Heat the oven to 200C / 180C fan and lightly oil a small baking dish.
In a large bowl, mix the oats, chia seeds and salt.
Whisk the coconut milk, almond milk, maple syrup, mashed banana and vanilla together until smooth.
Pour the wet mixture into the dry ingredients and stir well, then fold in two thirds of the berries.
Tip into the dish and scatter the remaining berries over the top.
Bake for 30-35 minutes until the middle is just set and the edges are lightly golden.
Leave to stand for 10 minutes before spooning into bowls.
