Cardamom Poached Pears with Pistachio

Pears take beautifully to warm spice, and this version keeps things soft, fragrant and not too sweet. The cooking syrup turns lightly citrusy from the orange, while chopped pistachios add a bit of crunch at the table. It makes an easy pudding when you want something elegant without baking.

Method
Serves 4 · about 35 minutes from start to finish.
Put the water, maple syrup, orange zest, orange juice, cardamom pods and cinnamon stick into a saucepan wide enough to hold the pears snugly.
Bring to a gentle simmer and stir until the maple has dissolved.
Lower in the pears, cover with a lid or a cartouche of baking paper, and poach gently for 20-25 minutes until tender when pierced.
Lift the pears onto serving plates and boil the poaching liquid for 3-4 minutes to reduce it slightly.
Spoon a little of the syrup over each pear and scatter with the chopped pistachios.
Serve warm, or chill and serve cold once the pears have absorbed a little more of the spiced syrup.
