Dark Chocolate Avocado Mousse

Blitzed until smooth, avocado becomes surprisingly lush and pudding-like. Here it carries the chocolate flavour beautifully, giving you a dessert that is rich, glossy and easy to make ahead. A small bowl goes a long way, especially when served well chilled.
Ingredients

Method
Serves 4 · about 15 minutes from start to finish.
Halve the avocados, remove the stones and scoop the flesh into a food processor.
Add the cacao powder, maple syrup, vanilla, salt and 4 tbsp of the cold water.
Blend until completely smooth, scraping down the sides once or twice. Add the final spoonful of water if you want a softer texture.
Taste and add a tiny extra drizzle of maple syrup if you prefer it sweeter.
Spoon into four small pots and chill for at least 30 minutes before serving.
