Blended cashews do something magical to a simple cauliflower soup, lending it a richness you would swear came from cream. A gentle hit of curry powder and turmeric keeps it interesting without overwhelming the sweet, roasted cauliflower. It is smooth, golden and completely dairy-free.

  • 1 large cauliflower, broken into florets

Method

Serves 4 · about 45 minutes from start to finish.

  1. Soak the cashews in just-boiled water for 15 minutes while you start the soup.

  2. Warm the olive oil in a large pan and soften the onion for 6-7 minutes. Add the garlic, curry powder and turmeric and cook for 1 minute.

  3. Add the cauliflower florets and stock, bring to the boil, then simmer for 18-20 minutes until the cauliflower is completely tender.

  4. Drain the cashews and add them to the pan.

  5. Blend everything until silky smooth, adding a little hot water if it is too thick.

  6. Season well with salt and pepper and serve with a scatter of toasted cashews on top.
