Za'atar Mixed Seed Crackers

These crackers are little more than a raft of good seeds bound together and baked until shatteringly crisp. There is no flour and no sugar, just chia and psyllium doing the binding while the seeds toast to a deep, savoury crunch. They keep for a fortnight in a tin and make any starter board look generous.

Method
Serves 8 · about 55 minutes from start to finish.
Heat the oven to 160C / 140C fan and line a large baking tray with parchment.
Stir all the seeds, flaxseed, psyllium, za'atar and salt together in a bowl.
Add the olive oil and water and mix well. Leave to stand for 10 minutes until it thickens into a spreadable, gel-like batter.
Tip onto the lined tray and spread as thinly and evenly as you can with the back of a spoon, right to the edges.
Bake for 30 minutes, then carefully slide the sheet out, peel off the paper and flip it back onto the tray.
Return to the oven for a further 15-20 minutes until fully crisp and golden.
Cool completely, then snap into rough shards. Store in an airtight tin.
