Diwali Baked Lentil & Spinach Samosa Pie
This is a samosa-inspired pie rather than a claim of tradition: all the comfort of spiced lentils, potato and spinach, baked in one generous dish. It is bright enough for a Diwali table, but practical enough to slice cleanly and share. No meat, egg, dairy or alcohol is needed.

Method
Serves 6 · about 75 minutes from start to finish.
Heat the oven to 200C / 180C fan and lightly oil a medium baking dish.
Simmer the potatoes for 8 minutes until just tender, then drain.
Rinse the lentils and simmer in 550ml water for 15-18 minutes until soft and thick. Stir often near the end.
Warm 1 tablespoon olive oil in a pan and cook the onion for 8 minutes. Add the garlic, ginger, garam masala and turmeric and stir for 1 minute.
Fold in the lentils, potatoes, spinach, coriander and lemon juice. Season well, then spoon into the dish.
Whisk the gram flour with 180ml water, the remaining olive oil, a pinch of salt and black pepper. Spread over the filling in a thin layer.
Bake for 22-25 minutes until the top is set, golden at the edges and lightly cracked.
