Sesame Edamame Smash

When you want something fresher than hummus but just as useful, this is the bowl to make. Edamame blends into a thick, vivid dip with a gentle nuttiness from tahini and sesame. Lime and chilli keep the whole thing lively rather than heavy.

Method
Serves 6 · about 15 minutes from start to finish.
Cook the edamame in simmering water for 3-4 minutes until tender, then drain and rinse under cold water to keep the colour bright.
Toast the sesame seeds in a dry pan for 1-2 minutes until fragrant.
Tip the edamame into a food processor with the tahini, olive oil, lime juice, garlic, chilli, half the toasted sesame seeds and a good pinch of salt.
Blend until roughly smooth, adding the water a spoonful at a time until you have a thick, scoopable smash.
Taste and adjust with more lime, salt or black pepper as needed.
Spoon into a bowl and scatter over the remaining sesame seeds before serving.
