This breakfast bake is sweet from dates and orange rather than a heavy icing, so it feels celebratory without being cloying. It is halal-suitable and vegetarian as written, with no pork, alcohol or gelatine. Serve warm squares with fruit and tea for an easy Eid morning table.

Method

Serves 6 · about 42 minutes from start to finish.

  1. Heat the oven to 190C / 170C fan and line a medium baking dish.

  2. Stir the oats, dates, half the pistachios, cinnamon, baking powder and salt together.

  3. Whisk the oat milk, orange zest, orange juice, maple syrup and olive oil in a jug.

  4. Pour the wet mixture over the oats and stir well.

  5. Spoon into the dish, level the top and scatter with the remaining pistachios.

  6. Bake for 28-30 minutes until set and lightly golden. Rest for 10 minutes before cutting into squares.
