Greek Lamb Koftas with Tzatziki

These koftas are the kind of dinner that feels a bit celebratory without asking much of you. The lamb stays juicy, the cumin and coriander keep everything fragrant, and a bowl of chilled tzatziki brings welcome contrast. Put it on the table with a crisp salad and it all feels very easy.

Method
Serves 4 · about 40 minutes from start to finish.
Heat the oven to 200C / 180C fan and line a baking tray.
Put the lamb mince in a bowl with the ground coriander, ground cumin, half the garlic, a good pinch of salt and plenty of black pepper. Mix well, then shape into 8 sausage-like koftas.
Rub the koftas with the olive oil, set them on the tray and bake for 18-20 minutes, turning once, until browned and cooked through.
Meanwhile, grate the cucumber, squeeze out as much liquid as you can, then stir it into the Greek yogurt with the remaining garlic and most of the mint.
Season the tzatziki to taste and chill it until needed.
Scatter the hot koftas with the remaining mint and serve with the tzatziki alongside.
