Spiced Beef Koftas with Tahini Drizzle

These koftas are all about big, warming spice and very little fuss. Lean mince is worked with grated onion, garlic, coriander and paprika, then shaped around skewers and cooked hard and fast so the outsides char while the middles stay juicy. A loose tahini drizzle sharpened with lemon pulls it all together. Serve with a crunchy salad for a naturally lower-carbohydrate plate that still feels generous.

  • 500g lean beef mince

Method

Serves 4 · about 35 minutes from start to finish.

  1. Squeeze the excess liquid from the grated onion, then mix it into the mince with the garlic, ground coriander, cumin, smoked paprika, half the herbs and a good pinch of salt and pepper.

  2. With damp hands, shape the mixture into 8 sausage shapes and press each around a skewer. Chill for 10 minutes to firm up if you have time.

  3. Heat a griddle or grill to high. Cook the koftas for 10-12 minutes, turning, until nicely charred and cooked through.

  4. Meanwhile, whisk the tahini with the lemon juice and 3-4 tbsp cold water, a spoonful at a time, until you have a smooth, pourable drizzle. Season to taste.

  5. Toast the sesame seeds in a dry pan for a minute until golden.

  6. Drizzle the tahini over the koftas, scatter with sesame seeds and the rest of the herbs, and serve with a crisp salad.
