Moroccan Lamb with Apricot Couscous

This is a proper weekend pot of a dish - the kind you start after lunch and forget about while the house fills with the smell of cinnamon and slow-cooked lamb. Dried apricots melt into the sauce and turn it lightly sweet against the warm spice, and it all sits over a mound of quick couscous that soaks up every drop. Make it a day ahead if you can; like most stews, it is even better reheated.

  • 600g diced lamb shoulder

Method

Serves 4 · about 110 minutes from start to finish.

  1. Heat the olive oil in a large casserole over a medium-high heat. Brown the lamb in batches until well coloured all over, then lift out.

  2. Lower the heat, add the onion and cook for 6-7 minutes until soft. Stir in the garlic, cinnamon, ground coriander and cumin and cook for a minute until fragrant.

  3. Return the lamb, add the apricots and pour in the stock. Bring to a simmer, then cover and cook gently for 1 hour 15 minutes, until the lamb is meltingly tender.

  4. Uncover and simmer for a final 10-15 minutes to reduce the sauce, then season to taste.

  5. Meanwhile, put the couscous in a bowl, pour over 300ml boiling water, cover and leave for 5 minutes, then fluff with a fork.

  6. Spoon the lamb over the couscous and scatter with fresh coriander.

Cook's tip

A short cinnamon stick simmered whole in the sauce (and fished out at the end) gives an even rounder warmth than ground cinnamon alone.
