Pea, Mint & Smashed Avocado Toast

This lands somewhere between a starter and a very good brunch plate, which is no bad thing. Sweet peas keep the avocado from feeling too rich, while mint and lemon make the whole thing taste fresh and lively. A pinch of chilli on top gives it the last little nudge.

  • 1 lemon, juiced

Method

Serves 4 · about 15 minutes from start to finish.

  1. Cook the peas in boiling water for 2 minutes, then drain and run under cold water to keep them bright.

  2. Tip half the peas into a bowl with the avocados, mint, lemon juice, olive oil, salt and black pepper and crush roughly with a fork.

  3. Fold in the remaining peas so you keep some whole for texture.

  4. Toast the sourdough until crisp around the edges but still a little chewy in the middle.

  5. Pile the pea and avocado mixture onto the toast and spread it right to the corners.

  6. Scatter over the chilli flakes and serve straight away.

If your avocados are very soft, mash them first and fold the peas in at the end so the topping keeps a bit of shape.
