Pesto Chicken with Courgetti

This is the sort of green, glossy supper that makes a plate of courgetti feel like a treat rather than a compromise. Basil, pine nuts and parmesan come together in minutes, then coat both the chicken and the warm strands underneath. It is quick, fragrant and lovely on a summer evening.

Method
Serves 4 · about 35 minutes from start to finish.
Toast the pine nuts in a dry frying pan for 2-3 minutes until lightly golden, then tip onto a plate.
Put most of the basil, the toasted pine nuts, parmesan, garlic and 2 tbsp of the olive oil into a small processor and blend to a coarse pesto. Season to taste.
Slice the chicken breasts in half horizontally to make thinner pieces, then season them with salt and pepper.
Heat the remaining olive oil in a large frying pan and cook the chicken for 4-5 minutes on each side until golden and cooked through.
Add the courgetti to the pan and toss for 1-2 minutes just until lightly softened.
Stir through the pesto, top with the chicken and scatter over the remaining basil to serve.
