Kept in the freezer, this bark is a handy little pudding for warm evenings when you want something cold but not overly heavy. The yogurt freezes creamy, the pistachios stay pleasantly crunchy, and the cardamom adds a delicate perfume. Break it into uneven shards and it looks charmingly homemade on the plate.

Ingredients

Method

Serves 12 · about 10 minutes from start to finish.

  1. Line a small tray or freezer-safe container with baking paper.

  2. Stir the yogurt with the vanilla and cardamom until evenly mixed.

  3. Spread the yogurt about 1cm thick over the lined tray.

  4. Dot over the raspberries, then scatter with the pistachios and cacao nibs.

  5. Freeze for at least 4 hours until solid.

  6. Lift out, break into 12 pieces and serve straight from the freezer.
