Roasted Tomato & Basil Soup

Roasting both fresh and tinned tomatoes together gives this soup a fuller, more rounded flavour than a quick stovetop version. The onion softens into the sweetness of the tomatoes, and fresh basil keeps the finish lively. It is a useful recipe for cooler evenings when you want comfort without heaviness.

Method
Serves 4 · about 50 minutes from start to finish.
Heat the oven to 200C / 180C fan. Put the fresh tomatoes, garlic and onion into a roasting tin, add 1 tbsp of the olive oil and season lightly.
Roast for 30 minutes until the tomatoes have slumped and the onion is tender at the edges.
Tip the roasted vegetables into a saucepan with the chopped tomatoes and vegetable stock.
Bring to a gentle simmer for 10 minutes so the flavours meld together.
Add most of the basil and blend until smooth, then stir in the remaining olive oil.
Taste, season properly and serve with a few torn basil leaves on top.

For a slightly chunkier bowl, blend only half the soup and stir it back into the rest rather than pureeing the whole pan.
