Spring Bank Holiday Strawberry, Lemon & Oat Picnic Bars
These bars are made for Spring Bank Holiday bags: sturdy enough to pack, bright with lemon and dotted with strawberries. Oats and almonds make the crumb satisfying without a heavy icing or buttercream. Keep them cool, cut them into squares and they are easy to share outside.

Method
Serves 12 · about 45 minutes from start to finish.
Heat the oven to 180C / 160C fan and line a 20cm square tin.
Mash the strawberries with the lemon juice and chia seeds. Leave for 10 minutes to thicken slightly.
Mix the oats, ground almonds, maple syrup, melted coconut oil, lemon zest, vanilla and salt until clumpy.
Press two-thirds of the oat mixture firmly into the tin.
Spread over the strawberry mixture, then crumble the remaining oats on top.
Bake for 28-30 minutes until golden at the edges. Cool completely before cutting into 12 bars.
Pack in a lidded box with an ice pack if taking them on a picnic.
