St Andrew's Day Salmon, Neeps & Barley Bowl
This bowl nods to Scottish ingredients without turning dinner into a caricature. Sweet mashed swede, nutty barley, green vegetables and lemony salmon make a balanced celebration plate for St Andrew's Day. It is filling, bright and easy to serve from one tray and one pan.

Method
Serves 4 · about 50 minutes from start to finish.
Simmer the barley in plenty of water for 28-32 minutes until tender, then drain.
Boil the swede for 18-20 minutes until soft. Drain well and mash with a little salt, black pepper and half the lemon zest.
Heat the oven to 200C / 180C fan. Place the salmon on a lined tray, rub with 1 tablespoon olive oil, lemon juice, salt and pepper, then bake for 12-14 minutes until it flakes.
Warm the remaining olive oil in a wide pan and soften the leek for 6 minutes. Add the greens and cook for 4-5 minutes until tender.
Toss the drained barley with the leeks, greens, herbs and remaining lemon zest.
Spoon the barley and greens into bowls with the mashed swede, then top with the salmon.
