Teriyaki Salmon with Brown Rice

When you want something reliable but still a bit glossy and inviting, teriyaki salmon is hard to beat. The sauce turns shiny and savoury around the fish, the broccoli catches all those extra juices, and the brown rice makes it a proper sit-down meal. It is straightforward cooking with a very good payoff.
Ingredients

Method
Serves 4 · about 40 minutes from start to finish.
Cook the brown rice in plenty of boiling water for 22-25 minutes until tender, then drain well and keep warm.
Meanwhile, stir the soy sauce, ginger and honey together in a small bowl.
Set the salmon fillets on a foil-lined tray and spoon over half the teriyaki mixture.
Bake at 200C / 180C fan for 10 minutes, then brush with the remaining sauce and return to the oven for 4-6 minutes until the salmon flakes easily.
While the salmon cooks, steam the broccoli for 4-5 minutes until just tender and bright green.
Divide the rice between bowls, add the broccoli and salmon, then scatter with the spring onions and sesame seeds.

If you like a stronger glaze, simmer the teriyaki mixture in a tiny pan for 2 minutes before brushing it over the fish so it thickens slightly.
