Vaisakhi Black Dal & Jeera Brown Rice

This black dal and jeera brown rice is a generous vegan dish for a Vaisakhi table, built around the value of sharing food. It is not presented as an official langar dish, and it contains no meat, egg, dairy or alcohol. Slow simmering gives the dal its comfort without needing cream or butter.

  • 260g black urad dal or black lentils

Method

Serves 6 · about 80 minutes from start to finish.

  1. Soak the black dal overnight if you can, then drain and rinse.

  2. Simmer the dal in fresh water for 50-60 minutes until tender, topping up with water as needed.

  3. Cook the brown rice in plenty of water for 25-28 minutes. Drain, then stir through the cumin seeds and keep warm.

  4. Warm the olive oil in a pan and cook the onion for 8 minutes. Add the garlic, ginger, turmeric and garam masala for 1 minute.

  5. Stir in the chopped tomatoes and cooked dal. Simmer for 10 minutes, mashing some dal against the side of the pan to thicken.

  6. Fold in the spinach until wilted, season with salt and finish with coriander. Serve with the jeera rice.

Cook's tip

If the dal thickens too much, loosen it with hot water a little at a time. It should be spoonable rather than dry.
