Yule Squash, Chestnut & Cranberry Wreath

This winter wreath is made for a candlelit Yule meal, but it does not claim a universal Pagan food rule. Roasted squash, chestnuts, lentils and cranberries bring warmth and colour, while a seed topping gives the ring a crisp edge. It slices like a nut roast, only brighter.

Ingredients

  • 750g butternut squash, peeled and cubed

  • 180g cooked chestnuts, roughly chopped

  • 1 red onion, finely chopped

  • 2 cloves garlic, crushed

  • 1 tbsp chopped rosemary and thyme

  • 80g wholemeal breadcrumbs

Method

Serves 6 · about 75 minutes from start to finish.

  1. Heat the oven to 200C / 180C fan. Toss the squash with 1 tablespoon olive oil, salt and pepper and roast for 25 minutes until soft.

  2. Simmer the lentils in water for 22-25 minutes until tender, then drain very well.

  3. Warm the remaining olive oil in a pan and cook the onion for 8 minutes. Add the garlic and herbs for 1 minute.

  4. Mash half the squash in a large bowl, then fold in the remaining squash, lentils, chestnuts, cranberries, breadcrumbs and onion mixture.

  5. Press the mixture into an oiled ring tin or shape it into a wreath on a lined baking tray. Scatter pumpkin seeds over the top.

  6. Bake for 20 minutes until firm and lightly crisp. Rest for 10 minutes before slicing.

Cook's tip

If you shape the wreath by hand, put a small ovenproof bowl in the middle while it bakes, then lift it out before serving.
