Banana & Berry Nice Cream

This is the sort of dessert that feels almost playful to make - a few frozen ingredients, a quick blitz, and suddenly you have a bowl of soft, rosy ice cream. The almond butter rounds out the fruit and makes it taste fuller without any dairy. Eat it straight away while it is at its fluffiest.

Method

Take the bananas and berries out of the freezer for 5 minutes so they soften slightly at the edges.
Put them in a food processor with the almond butter and vanilla.
Blitz until crumbly, then add the cold water a spoonful at a time until the mixture turns smooth and thick.
Scrape down the sides as needed and keep blending until it looks like soft-serve ice cream.
Spoon into bowls and serve immediately.

Cook's tip
If you want firmer scoops, freeze the blended nice cream for 20-30 minutes, but do not leave it too long or it will set hard.
