These little skewers do the work of a classic caprese salad without any fuss at the table. Creamy mozzarella, sweet tomatoes and torn basil make a combination that never really needs improving. A quick drizzle of olive oil and balsamic is enough to make them feel party-ready.

Method

Serves 6 · about 15 minutes from start to finish.

  1. Thread the mozzarella pearls, cherry tomatoes and folded basil leaves onto 18 small skewers or cocktail sticks, alternating the colours as you go.

  2. Arrange the skewers on a serving plate in a single layer so the filling stays neat and chilled.

  3. Whisk the olive oil with the balsamic vinegar and a pinch of black pepper.

  4. Spoon the dressing lightly over the skewers, keeping most of it on the plate rather than soaking the basil.

  5. Finish with a tiny pinch of salt just before serving so the tomatoes stay glossy and firm.
