Grilled Halloumi with Lemon & Herbs

Halloumi earns its place on the table when it is cooked until the edges bronze and the middle stays springy. Here it gets a bright little dressing of lemon, mint and parsley, plus a pinch of chilli for lift. It is simple, punchy and ideal for sharing straight from the pan.

Method
Serves 4 · about 18 minutes from start to finish.
Pat the halloumi dry and slice it into thick batons or slabs.
Stir the lemon zest, half the juice, the mint, parsley, chilli flakes and black pepper together in a small bowl.
Heat a ridged griddle pan or heavy frying pan over a medium-high heat and brush the halloumi lightly with the olive oil.
Cook the halloumi for 2-3 minutes on each side until deep golden with charred lines.
Arrange on a plate, spoon over the herb mixture and drizzle with the rest of the lemon juice.
Serve while the cheese is still hot and squeaky.

Do not salt the dressing - halloumi brings plenty on its own, so a last-minute crack of black pepper is usually enough.
