Chocolate-Dipped Frozen Banana Bites

A banana slice dipped in chocolate should not be this pleasing, yet somehow it always is. The fruit freezes creamy, the coating snaps when you bite into it, and a little coconut on top makes them look finished rather than fussy. Keep a tray in the freezer for hot afternoons or after-dinner nibbling.

Method
Serves 12 · about 15 minutes from start to finish.
Line a small tray or plate with baking paper.
Slice the bananas into 12 thick rounds and arrange them on the tray, then freeze for 20 minutes until firm.
Melt the dark chocolate with the coconut oil in a heatproof bowl set over barely simmering water, then whisk in the cacao powder until glossy.
Dip each banana round halfway into the chocolate and return it to the tray.
Sprinkle over the desiccated coconut before the coating sets.
Freeze again for 30 minutes, then serve straight from the freezer.

Cook's tip
Work with half the banana pieces at a time if your kitchen is warm - they are easier to dip neatly while very cold.
