Ginger Beef & Broccoli with Sesame

Thin slices of beef and plenty of fresh ginger are the trick here - both cook in minutes, so the whole thing is done in the time it takes to boil the rice. The broccoli goes in with just enough water to steam-fry until emerald green and still crunchy, and a shower of toasted sesame seeds at the end gives it a nutty, savoury finish. Simple, fast and endlessly repeatable.

Method
Serves 4 · about 30 minutes from start to finish.
Cook the brown rice in boiling water for 25 minutes, or according to the packet, then drain and keep warm.
Toss the sliced beef with the ground ginger, cornflour and 1 tbsp of the soy sauce. Toast the sesame seeds in a dry wok until golden, then set aside.
Heat the oil in the wok over a high heat. Stir-fry the beef in two batches for 1-2 minutes each until just browned, then lift out.
Add the broccoli with a splash of water, cover and steam-fry for 3-4 minutes until bright green and just tender.
Return the beef to the pan with the garlic, fresh ginger and remaining soy sauce. Toss for 1 minute until everything is coated and hot.
Serve over the rice, scattered with the toasted sesame seeds and spring onions.
