Moroccan Spiced Lamb & Aubergine

Aubergine and lamb are very good company, especially when there are warm spices involved. As everything cooks down together, the tomatoes turn jammy, the aubergine goes silky and the lamb keeps the dish properly satisfying. It feels generous enough for a weekend, but it is simple enough for a weekday too.

Method
Serves 4 · about 45 minutes from start to finish.
Heat the oven to 200C / 180C fan.
Warm 1 tbsp of the olive oil in a large ovenproof frying pan or shallow casserole. Brown the lamb mince for 6-8 minutes, breaking it up as it cooks, then season and scoop it onto a plate.
Add the remaining olive oil and the aubergine to the pan and cook for 6 minutes until the edges start to soften and colour.
Stir in the onion, garlic, garam masala and smoked paprika and cook for 2 minutes until fragrant.
Return the lamb to the pan, pour in the chopped tomatoes and simmer for 5 minutes, stirring well.
Transfer to the oven for 12-15 minutes until bubbling and slightly reduced, then scatter over the mint before serving.
