Paprika Roast Chicken with Butter Beans

Everything about this one is designed to be easy: one tray, a handful of store-cupboard tins, and forty minutes in the oven while you get on with your evening. The chicken skin crisps up under a rub of smoked paprika while the butter beans underneath turn soft and creamy in the tomatoey juices. It is a low-fuss, lower-refined-carbohydrate way to feed the family that still feels like a proper Sunday roast.

Method
Serves 4 · about 55 minutes from start to finish.
Heat the oven to 200C (fan 180C). Pat the chicken thighs dry and rub them all over with 1 tbsp of the olive oil, the smoked paprika and a good pinch of salt and pepper.
In a large roasting tray, stir together the butter beans, chopped tomatoes, onion, garlic, red pepper and the remaining olive oil. Season and spread level.
Nestle the chicken thighs on top, skin-side up, so the skin sits above the beans and can crisp.
Roast for 35-40 minutes until the chicken is golden and cooked through and the beans are bubbling and thick.
Squeeze over the lemon and scatter with parsley.
Bring the whole tray to the table and serve with a green salad or some wilted greens.
