Peanut Butter Oat Energy Bars

These bars are the kind of thing you will be glad to find in the fridge halfway through a busy week. They are chewy, nutty and just chocolatey enough to feel like a treat, with pumpkin seeds adding a nice little bite. Because they are no-bake, they are also a good one to make with almost no effort.
Ingredients

Method
Serves 10 · about 15 minutes from start to finish.
Line a 20cm square tin or small loaf tin with baking paper.
Put the peanut butter, maple syrup and salt in a saucepan over a low heat and stir just until smooth and loosened.
Take the pan off the heat and fold in the oats, pumpkin seeds and most of the chocolate chips. Add enough hot water to make the mixture hold together when pressed.
Tip into the lined tin, press down firmly, and scatter the remaining chocolate chips over the top, pressing them in lightly.
Chill for at least 2 hours until firm, then cut into 10 bars.
