These bars are the kind of thing you will be glad to find in the fridge halfway through a busy week. They are chewy, nutty and just chocolatey enough to feel like a treat, with pumpkin seeds adding a nice little bite. Because they are no-bake, they are also a good one to make with almost no effort.

Ingredients

Tick the store-cupboard items you would like, then add them to your basket in one tap.

  • 60g dark chocolate chips

  • 1 pinch salt

  • 3-4 tbsp hot water

Ticked items go to your Lean & Healthy basket. Fresh items like onions and herbs are best picked up from your local shop.

Method

Serves 10 · about 15 minutes from start to finish.

  1. Line a 20cm square tin or small loaf tin with baking paper.

  2. Put the peanut butter, maple syrup and salt in a saucepan over a low heat and stir just until smooth and loosened.

  3. Take the pan off the heat and fold in the oats, pumpkin seeds and most of the chocolate chips. Add enough hot water to make the mixture hold together when pressed.

  4. Tip into the lined tin, press down firmly, and scatter the remaining chocolate chips over the top, pressing them in lightly.

  5. Chill for at least 2 hours until firm, then cut into 10 bars.

Cook's tip

For the neatest slices, chill the slab really well and use a sharp knife wiped clean between cuts.
