St Patrick's Day Colcannon-Topped Lentil Pie
This pie brings together a rich lentil filling and a cabbage-flecked colcannon-style topping for a generous St Patrick's Day meal. It is Irish-inspired rather than dressed up as a fixed classic, and it keeps things practical with everyday vegetables. No meat, dairy or alcohol is needed.

Method
Serves 6 · about 75 minutes from start to finish.
Simmer the potatoes for 18-20 minutes until tender. Drain and mash with 1 tablespoon olive oil, salt and pepper.
Steam or boil the cabbage for 3 minutes, drain well and fold it through the mash.
Warm the remaining olive oil in a large pan and cook the onion, carrots and celery for 8 minutes.
Add the garlic and tomato puree for 1 minute, then stir in the lentils, chopped tomatoes and stock.
Simmer for 30-35 minutes until the lentils are tender and the filling is thick. Season well.
Heat the oven to 200C / 180C fan. Spoon the lentils into a baking dish, top with the cabbage mash and rough up the surface.
Bake for 18-20 minutes until the top is lightly golden.
