Tahini, Date & Cacao Truffles

These truffles are small but deeply satisfying, with the sort of fudgy texture that makes one feel enough. Tahini gives them a savoury edge that stops the dates from becoming cloying, and a dusting of coconut finishes them neatly. They are useful to keep in the fridge when you want something sweet without turning on the oven.

Method
Serves 12 · about 15 minutes from start to finish.
If the dates feel firm, soak them in hot water for 10 minutes, then drain well.
Blitz the dates, tahini, cacao powder, desiccated coconut and salt in a food processor until the mixture clumps together.
Add 1 tbsp water only if needed to help it come together into a soft dough.
Roll into 12 truffles with damp hands, then coat them lightly in extra cacao powder or coconut.
Chill for 30 minutes before serving so they firm up.
