Turkey Meatballs with Courgetti

This is the sort of bowl that gives you all the comfort of meatballs and sauce without feeling heavy afterwards. The almond flour keeps the turkey mixture tender, while ribbons of courgette stand in neatly for pasta. A handful of basil at the end makes the whole thing smell like dinner is properly sorted.

Method
Serves 4 · about 45 minutes from start to finish.
Mix the turkey mince with the almond flour, half the garlic, half the onion, a good pinch of salt and plenty of black pepper. Shape into 16 small meatballs.
Heat 1 tbsp of the olive oil in a large frying pan and brown the meatballs for 6-8 minutes, turning gently, until golden all over. Lift them out onto a plate.
Add the remaining olive oil to the pan and cook the rest of the onion for 4-5 minutes until soft. Stir in the remaining garlic for 30 seconds.
Pour in the chopped tomatoes, season well and simmer for 5 minutes, then return the meatballs to the pan and cook gently for 8-10 minutes until cooked through.
Meanwhile, spiralise the courgettes into courgetti, or shave them into long ribbons with a peeler.
Toss the courgetti through the hot sauce for 1-2 minutes just to warm it slightly, then finish with the basil and serve.
