When the fruit bowl hands you a couple of very ripe bananas, these cookies are a fine way to use them up. They bake soft in the middle with toasty edges, and the raisins turn sweet and jammy. Keep them for packed lunches, afternoon tea, or a quick bite with coffee.

Method

Serves 12 · about 26 minutes from start to finish.

  1. Heat the oven to 190C / 170C fan and line a baking tray.

  2. Mash the bananas in a bowl until mostly smooth.

  3. Stir in the peanut butter and salt, then mix in the oats and raisins to make a thick, sticky dough.

  4. Leave the mixture for 5 minutes so the oats can soften slightly.

  5. Scoop 12 small mounds onto the tray and flatten them gently with the back of a spoon.

  6. Bake for 14-16 minutes until lightly golden at the edges, then cool on the tray for 10 minutes before serving.

Cook's tip

If your bananas are very large and the mixture feels loose, stir in an extra spoonful of oats before shaping the cookies.
