3-Ingredient Banana Oat Cookies

When the fruit bowl hands you a couple of very ripe bananas, these cookies are a fine way to use them up. They bake soft in the middle with toasty edges, and the raisins turn sweet and jammy. Keep them for packed lunches, afternoon tea, or a quick bite with coffee.

Method
Serves 12 · about 26 minutes from start to finish.
Heat the oven to 190C / 170C fan and line a baking tray.
Mash the bananas in a bowl until mostly smooth.
Stir in the peanut butter and salt, then mix in the oats and raisins to make a thick, sticky dough.
Leave the mixture for 5 minutes so the oats can soften slightly.
Scoop 12 small mounds onto the tray and flatten them gently with the back of a spoon.
Bake for 14-16 minutes until lightly golden at the edges, then cool on the tray for 10 minutes before serving.
