A frittata is one of those useful meals that feels calm and capable from the start. Mushrooms bring savoury depth, spinach keeps it fresh, and a little parmesan melts in to give the whole thing a gently golden top. It is just as good for a quiet supper as it is for slicing up later on.

  • 120g spinach

  • 50g parmesan, finely grated

Method

Serves 4 · about 30 minutes from start to finish.

  1. Heat the oven to 200C / 180C fan.

  2. Warm the olive oil in a medium ovenproof frying pan and cook the onion for 4-5 minutes until soft.

  3. Add the mushrooms, season lightly and cook for 6-7 minutes until their moisture has cooked away and they start to colour.

  4. Stir in the spinach and let it wilt for 1 minute.

  5. Beat the eggs with most of the parmesan and a little black pepper, then pour into the pan and stir once to distribute the vegetables evenly.

  6. Scatter over the remaining parmesan and bake for 10-12 minutes until just set in the centre. Leave to stand for 5 minutes before slicing.
