Prawn Cocktail Little Gem Cups

There is a familiar prawn-cocktail feeling here, but the whole thing is fresher and lighter than the old-school version. Crisp lettuce replaces the usual glass bowl, avocado softens the edges, and a dusting of paprika gives the lemony dressing some warmth. It is a very easy first course for warm evenings.

Method
Serves 4 · about 15 minutes from start to finish.
Pat the prawns dry and halve any larger ones so the filling is easy to spoon.
Stir the mayonnaise with the lemon juice, olive oil, paprika and a little black pepper until smooth.
Fold the prawns and diced avocado through the dressing gently so the avocado keeps its shape.
Arrange the Little Gem leaves on a platter, choosing the cup-shaped inner leaves where possible.
Spoon the prawn mixture into the leaves, making sure each cup gets a little of the dressing.
Serve straight away, with any extra paprika dusted lightly over the top.
