Smoked Salmon & Avocado Cucumber Boats

This is one of those quietly useful starters that feels cool and polished without needing the hob. Crisp cucumber keeps everything light, while avocado adds creaminess and hot-smoked salmon brings a softly flaky richness. A squeeze of lemon and some dill are all it needs to wake up the plate.

Method

Serves 4 · about 15 minutes from start to finish.

  1. Toast the sesame seeds in a dry pan for 1-2 minutes until nutty, then set aside.

  2. Halve the cucumbers lengthways and use a teaspoon to scrape out the watery seeds, leaving a shallow channel down each half.

  3. Mash the avocado with the lemon juice, olive oil and a little black pepper until still slightly textured.

  4. Fold in most of the dill, then spread the avocado mixture along the hollowed cucumber halves.

  5. Top with flakes of hot-smoked salmon and sprinkle over the toasted sesame seeds.

  6. Finish with the remaining dill and serve chilled.
